A classic sauce for a classic British dessert.

cups muscovado brown sugar1 1/2
cups (3 sticks) unsalted butter, softened1
cup heavy cream1
tablespoon vanilla1/2
teaspoon salt1/4
teaspoon ground cardamom

For the pudding: In a medium pot, combine the brown sugar, butter, cream, vanilla and salt. Bring to a boil and then simmer, stirring constantly, until thickened, about 10 minutes.

Place the cake on a platter, pour the sauce over. Slice and serve immediately.
