This wonton filling recipe by Guest Chef Eva Chin is done in a Cantonese style. There are many styles and flavours of dumplings around the world that are very regional and eaten on different occasions!

You can buy egg wonton wrappers or Shanghai wonton wrappers at most Asian grocery stores, or in the international freezer section of most major grocery stores.

1 pound raw shrimp, peeled (thawed, if frozen)4 teaspoons fresh ginger, peeled and minced4 teaspoons scallions, green parts only finely chopped1 teaspoon white peppercorn, finely ground1/4 cup Chinese cooking wine (optional)1 1/4 teaspoons chicken essence powder, or chicken bouillon or stock powder1 tablespoon kosher salt Egg wonton wrappers or Shanghai wonton wrappers

Get Organized!

Gather your mis en place; get together all of the equipment needed for the recipe and gather all of the ingredients.

Get Prepped!

If using a stand mixer, roughly chop half of the shrimp, keeping the pieces as big as peas. If mixing by hand with a wooden spoon, chop all of the shrimp, keeping the pieces as big as peas.

Peel the ginger and grate with a rasp.

Cut the green parts of 1 – 2 scallions finely, reserving the white parts for another use.

Get Cooking!

This recipe involves lots of mixing which you can do by hand with a large wooden spoon and a mixing bowl, or use a stand mixer on a low speed fitted with a paddle attachment. 

If using a stand mixer, mix the half pound of un-chopped shrimp on low speed while slowly adding the Chinese cooking wine, salt, chicken powder, white peppercorn, and ginger until a paste forms. Remove the mixing bowl from the stand and scrape down sides and paddle.

If not using a stand mixer
, in a mixing bowl with a large wooden spoon, vigorously mix half a pound of chopped shrimp while slowly adding the Chinese cooking wine, salt, chicken powder, white peppercorn, and ginger until a paste forms. This may take some time, work those muscles!

With a wooden spoon or spatula, fold in the final half pound of chopped shrimp and the green onion until everything is mixed into the paste uniformly. Avoid overworking the mixture at this stage.

Cover bowl with plastic wrap and chill in the fridge for at least 1 hour.

Prepare a small bowl of water and open your wonton wrappers. Dip a finger in the small bowl of water and wet the edges of a wonton wrapper. Using a spoon, scoop a small amount of filling into the middle of the wrapper and fold the wrapper in the preferred style.
