Pineapple Cucumber Salad

This refreshing salad is easy and quick to make and brings a super fresh flavour to any meal.

1 pineapple, cored and diced2 cucumbers, diced1 cup cilantro, finely chopped2 limes, juiced1 teaspoon honey1/4 cup grape-seed oil Pepper to taste Salt to taste

Gather your mise en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

Cut the skin off of the pineapple, and cut it into 4 pieces through the core. Cut the core out of each piece of pineapple.

Cut each quarter of the pineapple into finger width pieces, and then dice them into cubes, about 1 centimetre.

Cut the end off of each cucumber. Cut the in half lengthwise and then into three pieces lengthwise. Dice the cucumber into cubes, about 1 centimetre.

Remove the cilantro from the stem, and chop the leaves finely with a knife or scissors.

Cut the lime in half, and squeeze out as much juice as possible.

Measure out the grapeseed oil and honey.

Get Cooking!

Mix together the lime juice and honey, and slowly whisk in the grapeseed oil. Season the dressing to taste with salt and pepper.

In a large bowl, combine pineapple, cucumber, cilantro, and dressing. Mix together well and season to taste with salt. Serve immediately.
