Ingredients
3 large onions1/4 cup flour1/2 cup grapeseed oil1 1/2 cups green lentils1 cup basmati rice6 cups vegetable stock2 tablespoons olive oil2 tablespoons coriander seeds1 tablespoon cumin seeds1/2 teaspoon ground allspice1 teaspoon cinnamon1/2 teaspoon turmeric powder Salt Pepper

Get Organized!

Gather your mise en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

Cut the onions in half from root to tip, and peel off the outer skin. Place the flat side down on the cutting board and slice along, following the grooves on the outside of the onion.

Measure out the flour, oils, lentils, rice, stock, and spices.

Toss the onions in the flour to coat them evenly.

Get Cooking!

Place the large pot over medium heat and add the olive oil and spices. Cook the spices, stirring often, until they are fragrant, about 2 – 3 minutes.

Add the lentils and vegetable stock, stir well and season with salt. Bring the stock up to a simmer, cover, and cook for 15 minutes.

Place the pan over medium heat and add the grapeseed oil. Once hot, add the onions and cook until the edges have darkened and become caramelized, about 15 minutes. Stir often.

After the lentils have simmered for 15 minutes, add the rice, stir, and cover the pot again and cook for another 15 minutes.

Once the rice and lentils have cooked through, taste, and adjust the seasoning if necessary. Spoon onto a serving plate and top with the caramelized onions.
