Get Organized!
Gather your mise en place; get together all of the equipment needed for the recipe and gather your ingredients.
Get Prepped!
In a blender combine frozen raspberries, ½ cup water, lemon zest and juice and vanilla. Blend until well combined and pass through a strainer into a bowl, set aside.
Remove the hulls of the strawberry and slice thinly. Set aside.
In a stand mixer with a whisk attachment, whip the cream cheese until light and softened. Remove from the mixer and set aside. Add the 35% cream and the icing sugar and whip on high speed until the cream has turned to stiff peaks. Remove from the bowl and combine well with the whipped cream cheese.
Dip the lady fingers on each side into the raspberry mixture, then place one layer of the soaked lady fingers in the bottom of the baking dish.
Place roughly half of the whipped cream and cream cheese mixture on top of the lady fingers and spread out evenly. Top with a mix of the sliced strawberries and blueberries, reserving some to garnish the top if you would like.
Top with another layer of dipped lady fingers, and another layer of the whipped cream cheese mixture and smooth out evenly. Cover with saran wrap and let chill in the fridge before serving. Optionally, garnish the top with any remaining fresh fruit.
