1/2 pound ground pork1 tablespoon garlic, minced1 teaspoon ginger, minced1 tablespoon soy sauce1 tablespoon shoaling wine or dry sherry pinch of black pepper1 tablespoon cooking oil200 grams wheat noodles, such as ramen noodles1 cup chopped napa cabbage1 green onion, chopped crushed peanuts or sesame seeds for garnish

For the Sauce

1 teaspoon garlic, minced2 tablespoons tahini or peanut butter1 1/2 tablespoons soy sauce1 teaspoon dark soy sauce3 tablespoons chili oil with chili flakes1 tablespoon Sichuan peppercorns, toasted and ground1/2 tablespoon sugar

Get Organized!

Gather your mise en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

Finely mince the garlic and the ginger with a rasp. Add to the ground pork with the soy sauce, shaoxing wine, and black pepper.

Finely mince the garlic for the sauce with a rasp. Measure the tahini, two types of soy sauce, chili oil, sichuan peppercorns, sugar and mix together.

Finely chop the cabbage. Chop the green onion for garnish.

Get Cooking!

Preheat a pan over medium high heat and add the cooking oil. Add the pork mixture and cook until it is fully cooked and starting to have browned edges with no more moisture in the pan.

Cook the noodles according to the package instructions, and add the napa cabbage to the noodles while cooking. Strain and set aside.

Place a few tablespoons of sauce on the bottom of the serving bowl and lay the noodles and greens on top.

Top with ground pork, green onions and sesame seeds or peanuts.
