1/4 head of green cabbage1 carrot, peeled and shredded1/2 small onion, thinly sliced1 jalapeno, thinly sliced4 cups boiling water1/4 teaspoon oregano1/2 cup white or apple cider vinegar Salt to taste

Gather your mise en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

Thinly slice the cabbage. Peel and grate the carrot. Thinly slice the onion and the jalapeno. Measure out the water and place in a pot, bring to a boil. Measure out the oregano and vinegar.

Get Cooking!

When the water has come to a boil, carefully pour it over the thinly sliced cabbage and allow it to sit for one minute. After the minute is up, strain the cabbage and rinse under cold water.

Mix together the cabbage, carrot, onion, jalapeno, oregano, and vinegar in a bowl and toss with a pair of tongs. Season with salt and allow to sit for at least ten minutes.
