Cowboy Caviar

This southwestern salad can be eaten as a delicious side, or served as a dip. If you are preparing it as a dip, make sure that all of the ingredients are cut quite small, usually about the size of the corn and the beans so they can be easily scooped onto a tortilla chip.

Ingredients
1 bell pepper, finely diced1 orange pepper, finely diced1 yellow pepper, finely diced1 green pepper, finely diced2 jalapeno peppers, finely diced1 small red onion, finely diced2 cups corn1 1/2 cups feta cheese, crumbled1 can sliced black olives2 cans black beans, rinsed1 can pinto beans, rinced2 avocados, diced

Dressing

Ingredients
3 limes, juiced1/2 cup olive oil1/4 cup white wine vinegar4 tablespoons taco seasoning2 tablespoons honey2 tablespoons sugar salt to taste pepper to taste

Get organized!

Gather your mise en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

Cut the peppers and jalapenos in half and remove the seeds and pith. Slice them into pieces about Ā½ centimetre, and then dice them finely.

Cut the onion in half and remove the skin. Make incisions from tip to root on the onion, almost all the way to the root, but keeping the root end intact about Ā½ centimetre apart. Turn the onion and slice across these incisions to dice finely.

Measure out the corn, feta cheese, and olives.

Open the cans of beans, strain and rinse them.

Cut the avocados in half, and remove the pit. Scoop out the avocado flesh, and dice the avocado.

Cut the limes in half and squeeze out as much juice as possible.

Measure the white wine vinegar and mix together with the lime juice.

In a separate bowl, measure the olive oil.

Measure the taco seasoning, honey, and sugar.

Get Cooking!

Mix together all of the salad ingredients in a bowl.

In a medium bowl, add the lime juice, white wine vinegar, taco seasoning, honey, and sugar. Slowly drizzle in the olive oil while constantly whisking to make the dressing. Season with salt and pepper to taste.

Pour the dressing over top of the salad ingredients and mix together.
