10 large eggs1/2 cup cottage cheese1/2 teaspoon salt1/4 teaspoon pepper1 1/2 cups add ins such as vegetables, cheese, or meats finely diced nonstick spray

Gather your mise en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

Preheat the oven to 375°F.

Crack the eggs into a large bowl, and measure the cottage cheese into the bowl. Add the salt and pepper, and whisk together until the eggs are frothy.

Cut desired toppings such as vegetables, cheese, or proteins into finely diced pieces. Mix them together in a bowl.

Spray the muffin tin with nonstick cooking spray. Add egg mixture to the muffin tins, filling about halfway. Add about 3 tablespoons of the mix ins into each muffin tin.

Get Cooking!

Bake the egg muffins for 2025 minutes until puffy and cooked through. Let cool slightly, and remove them from the muffin tin, using a small spatula to loosen them if needed.
