Chicken Brine

Brining is a process where chicken is immersed in a salty liquid and left to marinate to add flavour, tenderize and add moisture so the chicken stays juicer when roasted!

5 chicken breasts1/4 cup salt5 cups water1/2 bunch thyme1/2 bunch rosemary3 garlic cloves Peppercorns

Get Organized!

Gather your mis en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

Chop chicken into 1‑inch pieces.

Measure rest of ingredients, separating 1 cup of water from 9 cups.

Get Cooking!

Boil about 1 cup of water, add salt, let dissolve.

Combine boiling salt water with the rest of water, add seasonings.

Add chicken to cooled brine solution. Let brine for 12 hours or up to 3 days.
