Get Organized!
Gather your mise en place; get together all of the equipment needed for the recipe and gather your ingredients.
Get Prepped!
Measure the cocoa powder, chocolate chips, and butter. Open the can of sweetened condensed milk.
Measure about 1 cup of chocolate sprinkles into a separate bowl.
Get Cooking!
In a medium pan over medium heat, combine the sweetened condensed milk, cocoa powder, and chocolate chips. Stir until everything is dissolved.
Cook the mixture over low to medium heat for about 5 minutes, stirring constantly and scraping the sides as you go, until the mixture is thickened. Check the consistency; it should be ready when the mixture pulls away from the bottom of the pan and has a thick, fudgy consistency. If you want to test it, drop a little bit onto a cold plate and make sure that it firms up and is able to roll into a ball.
Remove the pan from the heat, add the butter and mix well then scrape the mixture into a bowl. Let it cool until it is cool enough to handle.
When it is cool enough to touch, grease your hands with a little bit of butter or oil. Scoop out small amounts of the mixture, about 1 tablespoon, and roll them into a ball.
Roll the mixture into chocolate sprinkles, and continue this until all of the dough is used up. Feel free to experiment with different sprinkles and flavours for the brigadieros.
