Black Vinegar Mushroom Salad

This salad is traditionally made in China with wood ear mushrooms that have a firm seaweed like texture. You can find them dehydrated at many international food stores. Black vinegar is an essential ingredient that brings a funky umami flavour to the salad.

Ingredients
1/4 cup dried wood ear mushrooms, or 1 pound fresh mushrooms1 cup cilantro, chopped2 garlic cloves, minced1 fresh Thai chili pepper, thinly sliced2 tablespoons grapeseed oil6 green onions, whites thinly sliced1 tablespoon black vinegar2 tablespoons soy sauce1 tablespoon sesame oil1/2 teaspoon sugar1 tablespoon toasted sesame seeds Salt to taste

Get Organized!

Gather your mise en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

If using dried mushrooms, soak them in warm water for about 30 minutes, until they are rehydrated. Rinse in cold water, and tear into sized pieces. If using fresh mushrooms, slice or rip into bite sized pieces.

Finely mince the garlic.

Remove the roots of the green onions, and thinly slice the whites of the onions. Reserve the greens for another use.

Finely chop the cilantro.

Finely chop the thai chili.

Measure black vinegar, soy sauce, sesame oil, sugar, and toasted sesame seeds.

Get Cooking!

Add the mushrooms to a medium pot with enough water to cover. Season water gently with salt. Boil over medium heat for 5 minutes. Strain the mushrooms and place them on a clean dish towel to dry well.

In a medium frying pan, add sesame oil and heat over low heat until fragrant. Add garlic, green onion, and thai chili, and cook for about 1 minute, then transfer immediately to a bowl.

Mix together oil and aromatics with black vinegar, soy sauce, and sugar.

Mix together the dressing with the mushrooms, cilantro, and toasted sesame seasons. Taste, and season with salt if needed.
