1 pound soba (or buckwheat) noodles

Ingredients
2 cups leaf lettuce, torn1 cup red cabbage, thinly sliced1 cucumber, sliced into ¼ inch strips1 carrot, grated1 pear, diced into ¼ inch strips1/2 cup green onions, thinly sliced1 cup bean sprouts1/2 cup kimchi2 hard-boiled eggs, thinly sliced

Sauce

Ingredients
4 tablespoons gochujang4 tablespoons rice vinegar2 tablespoons soy sauce2 tablespoons honey2 tablespoons brown sugar2 tablespoons toasted sesame oil2 tablespoons toasted sesame seeds

Get Organized!

Gather your mise en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

Wash lettuce and cabbage. Thinly slice lettuce island cabbage into strips.

Cut ends of cucumber off, discard. Slice cucumber in half. Then dice cucumber into ¼ inch strips.

Peel carrots. Cut the top and end of the carrot off, discard. Cut the carrot into 2 – 3 chunks. Cut each chunk in half. With the flat side down, dice the carrot into ¼ inch strips.

Wash pear. Cut the pear in half and discard the seeds. With the flat side down, dice the pear into ¼ inch strips.

Wash green onions. Cut the root off, discard. Thinly slice green onion.

Cut hard-boiled eggs in half. With the flat side down, slice eggs into thin strips.

Measure out all sauce ingredients.

Get Cooking!

Boil the noodles in boiling water following the package instructions. Drain noodles and run cold water over the noodles. Drain again.

Place all sauce ingredients in a mixing bowl and whisk to combine.

Place the noodles in a large serving bowl. Add the toppings. Add the sauce. Serve.
