Berry Crumb Bars

One of our favourite desserts to make with fresh (or frozen berries) are these delicious crumb bars. Feel free to use your favourite berries, if you are lucky enough to pick your own berries in the summer these bars are a great way to make them into a dessert!

For the Pastry

Ingredients
3 cups all-purpose flour1 cup sugar1 teaspoon baking powder1/4 teaspoon salt1/2 teaspoon cinnamon1 cup butter1 egg

For the Filling

Ingredients
1/2 cup sugar4 cups fresh blueberries3 teaspoons cornstarch Nonstick cooking spray

Get Organized!

Gather all of your ingredients and equipment before you get started!

Get Prepped!

Preheat oven to 350Ā°F. Line baking pan with parchment paper and spray with nonstick cooking spray.

Measure ingredients for the pastry and keep them in separate bowls; the flour, 1 cup sugar, baking powder, salt, cinnamon, butter, and egg.

Measure the ingredients for the filling and toss them together in a large bowl; berries, cornstarch, and the sugar.

Cube the butter up into 1 centimeter cubes, and add them to the bowl of the standmixer with the sugar. Mix together until well creamed. Add the egg, and mix until combined. Add in the flour, baking powder, salt and cinnamon and mix together until it is just starting to come together and quite crumbly.

Get Cooking!

Pat about Ā½ of the mixture into the bottom of the baking pan to form the bottom crust.

Sprinkle the berry mixture on top of the bottom crust.

Add the rest of the crumble mixture gently on top of the berries, to form the crumb topping.

Bake for 35 ā€“ 45 minutes, until pastry is golden and the berries are bubbly and warm.

Let cool completely, and cut into squares to serve.
