Dry Ingredients

1 cup all-purpose flour1/4 cup whole-wheat flour1/4 cup oat1 teaspoon baking powder1/2 teaspoon baking soda1 teaspoon cinnamon1/4 teaspoon salt

Wet Ingredients

1 egg1/3 cup brown sugar1/3 cup neutral oil1/2 cup plain yogurt1/4 cup milk1 teaspoon vanilla1 cup apple, finely diced

Measure the Dry Ingredients

Add 1 cup all-purpose flour, ¼ cup whole-wheat flour, ¼ cup oat flour, 1 teaspoon baking powder, ½ teaspoon baking soda, 1 teaspoon cinnamon and ¼ teaspoon salt to a bowl.

Chop the Apple

Use a safe chopper to make 1 cup of very small apple pieces.

Whisk the Wet Ingredients

In a second bowl whisk 1 egg, ⅓ cup brown sugar, ⅓ cup oil, ½ cup yogurt, ¼ cup milk and 1 teaspoon vanilla.

Combine Wet and Dry

Pour the wet bowl into the dry bowl. Fold gently just until the flour disappears.

Add the Apples

Add the 1 cup finely diced apple. Fold gently so the apples are spread through the batter.

Scoop and Bake

Scoop batter into the mini-muffin pan, filling each cup about ⅔ full. The chef bakes for 12 – 15 minutes. Cool before tasting!
