YMCA Growing Communities Sessions (Sept. 29th - Oct. 5th)

Thank you to all the awesome kids and volunteers who came to our Growing Communities sessions at the YMCA this week! We hope you had a fantastic time, because we know we sure did. You can find all the recipes for our taco toppings, our handpressed tortillas and the delicious chia agua fresca below. If you're cooking this all up at home, we would love to know how it went! THE MENU

Chia Agua Fresca

  • 1/2 cup lime juice
  • 1 cup sugar
  • 10 cups water 
  • 1 tbsp chia seeds

DirectionsPour lime juice and sugar into the water and stir until dissolved. Add the chia seeds and stir vigorously for one minute to prevent seeds clumping together. Stir again a few minutes later, and then let sit approx. 20 minutes. Stir again before serving. 

Roasted Corn & Tomato Salsa

  • 2 ears fresh corn, cut from the cob
  • drizzle of olive oil
  • salt & freshly ground black pepper to taste
  • 4 roma tomatoes, seeded and diced
  • 1/4 cup red onions, minced
  • 1 tsp jalapeno pepper, minced
  • 2 tbsp fresh cilantro, chopped
  • 2 tbsp lime juice

Directions: Season the corn with olive oil, salt and pepper. Roast corn in a hot pan until slightly charred, remove and cool. Dice tomatoes finely using safe chopper, discarding core and seeds. Combine red onions, jalapenos, and cilantro in food processor and pulse until finely minced. Combine the corn, tomatoes, onions, peppers, cilantro, and lime juice. Mix well. Season the salsa with salt and pepper.

Taco Spice

  • 1 tbsp chili powder
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • ¼ tsp chipotle powder
  • ¼ tsp dried oregano
  • 1 tbsp smoked paprika
  • 1 tsp cumin
  • 1 tsp salt
  • ½ tsp pepper

Black Bean Topping

  • 1 can black beans
  • 1 green pepper
  • 1/3 red onion
  • 1 clove garlic
  • 1 jalapeño diced 

Directions: Dice all vegetables. Add to a frying pan over medium high heat, and saute vegetables with splash of olive oil. When vegetables are mostly cooked, add beans and taco spice and a 1/4 cup of water. Heat until warmed through. 

Ground Beef Topping

Combine beef and taco spice (3 tbps of taco seasoning per pound) in pan medium high heat & splash of olive oil until browned. Remove excess fat if necessary. 

Tortilla Dough

  • 1 ¾ cups Masa Harina (found at your local grocery store in the Mexican section)
  • 1 tsp salt
  • 1 ¼ cups hot water

Directions: Combine the Masa, hot water and salt in a bowl and stir. When the dough starts to come together, knead until it can be formed into one large ball. Let the dough rest, covered with a clean tea towel, for about one half hour. Once the hour has passed, divide the dough into 24g-26g balls (or slightly smaller than a golf ball). Press, using a tortilla press, rolling pin or two plates, until 2mm (approximately) thick. Cook on a hot griddle until edges begin to curl. Flip, allow other side to brown (approximately 1-2 minutes per side) and then eat up!
