- 1 tbsp chili powder
- ¼ tsp garlic powder
- ¼ tsp onion powder
- ¼ tsp chipotle powder
- ¼ tsp dried oregano
- 1 tbsp smoked paprika
- 1 tsp cumin
- 1 tsp salt
- ½ tsp pepper
Lime and Chia Water
- 10 limes, juiced
- 8 cups cold water
- 1/2 cup sugar
- 2 tablespoons chia seeds
Mix cold water and sugar until sugar is dissolved. Add in lime juice and chia seeds. Let sit for at least half hour, stirring every so often.
Cilantro-Lime Cucumber Salad
- 4 cloves garlic, finely minced with microplane
- 6 tablespoons fresh lime juice
- 1/2 teaspoon crushed red pepper
- 1 teaspoon salt, or to taste
- black pepper to taste
- 6 tablespoons olive oil
- 4 cucumbers, very finely sliced
- 1/2 cup minced cilantro, to taste
In a medium sized bowl add 3 tablespoons of fresh lime juice, crushed red pepper, garlic, salt, and pepper.
Use a whisk to stir in the 3 tablespoons olive oil. Set aside.
Cut the cucumbers into small pieces. Finely mince the cilantro and add it to the bowl. Stir to combine.
Salsa Roja (Red Salsa)
- 1 15-ounce can of whole tomatoes
- ¼ cup onion, chopped
- 1 clove garlic, chopped
- 1 small jalapeño pepper, seeded and chopped (optional)
- ¼ cup cilantro, chopped
- 1 teaspoon dried oregano
- 2 teaspoons salt
- ½ to ¾ cup water
Add everything except the water to a blender. Add ½ cup of water and blend until smooth. You want the salsa to be pretty thin so add more water as needed.
Transfer the salsa to a saucepan and bring to a simmer over medium heat. Cook for 7-10 minutes until the salsa has thickened slightly. Taste and adjust seasonings as necessary. Remove from the heat and allow to cool to room temperature.
Transfer to a jar and serve immediately or refrigerate for up to 1 week.
- 1 pineapple, peeled, cored and chopped
- ½ cup red onion, diced
- 1 small red pepper, diced
- ½ - 1 jalapeno, diced (optional)
- juice of 2 limes
- 1 cup cilantro, chopped
- salt and pepper to taste
In a food processor or blender, combine diced onion, pepper, jalapeno, and cilantro with lime juice. Pulse the ingredients until they are not pureed, but finely chopped. Pour ingredients into a bowl. Add the chopped pineapple, and pulse again until not pureed but finely chopped. Combine pineapple with other ingredients according to your taste. Season with salt and pepper.
