Craigwood Cooking Class - Stir Fry Basics
Miso Honey Stir Fry
Ingredients
- 1 clove garlic, minced
- 1 inch piece of ginger, finely grated
- 2 tbsp miso
- 2 tbsp honey
- 4 tbsp rice wine vinegar
- 3 tbsp soy sauce
- 2 tsp sriracha
- 2 tbsp canola oil
- 1/2 cup vegetable stock
- 1 tsp cornstarch
- 1 cup snow peas
- 1 cup sweet peppers, julienned
- 1 cup carrots, julienned
- Optional: 1 block tofu
Directions
Heat oil in wok on medium-high heat. Combine all sauce ingredients in a
medium bowl, stir-fry vegetables. Add the sauce when veggies are
almost finished cooking, stirring constantly. Reduce to desired
thickness.
Japanese Yakisoba Stir Fry
Ingredients
- 1/2 cup soy sauce
- 1/3 cup mirin
- 4-6 cloves minced garlic
- 1 1/2 teaspoon minced ginger
- 3 tablespoons worcestershire sauce
- 3 teaspoons hoisin sauce
- 3 teaspoons ketchup
- 1 1/2 teaspoons sugar
- 1/2 cup water
- 1 cup peppers, julienned
- 1 cup cabbage, chopped
- 1 cup carrots, chopped
- Optional: 1 lb beef, cut into thin strips
Directions
Heat oil in wok on medium-high heat. Add beef if using. Stir-fry 5
minutes until cooked through. Remove from wok. Combine all sauce
ingredients in a medium bowl, stir-fry vegetables. Return beef to skillet,
and add the sauce when veggies are almost finished cooking, stirring
constantly. Reduce to desired thickness.
Green Curry
Ingredients
- 1 1/2 cup chicken breast or thigh - boneless/skinless
- 2 cups coconut milk
- 4 tbsp. green curry paste
- 2 tbsp. brown sugar or palm sugar if you can find it
- 2 tbsp. fish sauce, (2 to 3)
- 7 leaves kaffir lime
- 1/2 cup sweet basil
- 1 big green chili, chopped
- 1 thumb of ginger
- 2 each limes, juiced
- salt and pepper to taste
- 2 cups bok choy, chopped
- 1 cup zucchini, diced
- 1 cup snow peas
Directions
Heat oil in wok on medium-high heat. Add chicken and stir-fry 5
minutes until cooked through. Remove from wok. Combine all sauce
ingredients in a medium bowl, stir-fry vegetables. Return chicken to
skillet, and add the sauce when veggies are almost finished cooking,
stirring constantly. Reduce to desired thickness.
