Cornestone Session 2 - Breakfast!

Basic omelette

  • 2 eggs
  • 1 TBLS water
  • Salt and pepper
  • Canola oil for cooking
  • desired vegetables/meats/cheese of choice
  1. Crack eggs into small bowl, add water and whisk with fork until yolks and whites come together. Season with salt and pepper.
  2. Heat small non-stick pan over medium heat.
  3. Add canola oil, and swirl to coat pan.
  4. Add desired vegetables/meats and cook until fully cooked ~  Approx 2 minutes.
  5. Add in egg mixture, and let egg start to cook
  6. Fold in edges of omelette, while swirling pan to force any liquid egg to edges of pan.
  7. Stuff with cheese if desired, and fold in half. Serve immediately.

 

Potato Hash

  • Canola oil for cooking
  • Vegetables of choice (Peppers/onions/zucchini/kale etc.)
  • ~ Approx 4lbs left over potato (Roasted/steamed/boiled)
  • 4 cloves garlic, minced.
  • 1 Tbls Paprika
  • 2 Tbls Worcestershire
  • 1 Tbls Mustard (Grainy/Dijon/yellow)
  • 3 Tsp hot sauce(Franks/Tabasco/your favourite brand)
  • Salt and pepper to season 
  1. Place large frying pan over medium-high heat
  2. Add canola oil to pan and swirl to coat pan.
  3. Add minced garlic and desired vegetables into pan, and fully cook. ~ Approx 5 minutes depending on vegetables used.
  4. Turn heat to high, and add potato. Cook until crust starts to form. ~ Approx 5 minutes
  5. Mix remaining ingredients together in a small bowl. When potatoes are crisped, add mixture into pan. Toss to coat potatoes evenly. Season with salt and pepper, serve immediately.
