Cornerstone Stir Fry Class

Miso Honey Stir Fry 

Ingredients
  • 1 clove garlic, minced
  • 1 inch piece of ginger, finely grated
  • 2 tbsp miso
  • 2 tbsp honey
  • 4 tbsp rice wine vinegar
  • 3 tbsp soy sauce
  • 2 tsp sriracha
  • 2 tbsp canola oil
  • 1/2 cup vegetable stock
  • 1 tsp cornstarch
  • 1 cup snow peas
  • 1 cup daikon radish, julienned
  • 1 cup carrots, julienned
  • Optional: 1 block tofu chopped
Directions

Combine all sauce ingredients in a medium bowl. Heat oil in wok on medium-high heat. Stir-fry vegetables. Add the sauce when veggies are almost finished cooking, stirring constantly. Reduce to desired thickness. Serve with rice or noodles.

Thai Stir Fry

Ingredients

  • 1 lbs ground meat (turkey, chicken, beef, or pork)
  • 1 tablespoon grapeseed oil
  • 1 cloves garlic
  • 2 tablespoon soy sauce
  • 2 teaspoons hoisin sauce
  • 1 tablespoons fish sauce
  • 1/2 tablespoon sugar
  • 1/4 cup Thai basil, or cilantro
  • 1/4 cup mint leaves 
  • 1/2 tablespoon sriracha, or 1-2 teaspoon chilli paste (optional)
  • 1 small onion, thinly sliced
  • 2 small red peppers, thinly sliced
Directions

Begin by measuring ingredients. Heat oil in a wok over medium heat until hot. Add onions, sitrring constantly, and cook until very soft. Add ground meat, fish sauce and cook until brown. Add thinly sliced red peppers and garlic. Add the remaining sacue ingredients and chilli paste. Turn off the heat and top with herbs. Serve over rice or noodles. 

Yellow Curry Stir Fry

Ingredients
  • 1 1/2 cup chicken breast or thigh - boneless/skinless cooked
  • 2 cups coconut milk
  • 4 tbsp. yellow or green curry paste
  • 2 tbsp. brown sugar or palm sugar if you can find it
  • 2 tbsp. fish sauce
  • 7 leaves kaffir lime
  • 1/2 cup sweet basil
  • 1 big green chili chopped
  • 1 thumb of ginger
  • 2 limes, juiced
  • Salt and pepper to taste
  • 2 cups bok choy, chopped
  • 1 cup zucchini diced
  • 1 cup green beans
Directions

Combine all sauce ingredients in a medium bowl. Heat oil in wok on medium-high heat. Add chicken and stir-fry 5 minutes until cooked through. Remove from wok. Stir-fry vegetables. Return chicken to skillet, and add the sauce when veggies are almost finished cooking, stirring constantly. Reduce to desired thickness.
