Cornerstone Session 1 - Pasta!

Andrew’s awesome sauce - Regular

  • Canola oil for cooking
  • 1 ½ cups peas
  • 1/2 pound bacon,
  • 2 clove garlic, minced
  • 1 small shallot, minced
  • 1/4 cup white wine
  • 3/4 cup chicken stock
  • 2 tablespoons grainy mustard
  • 1/3 Cup Cream
  • Salt and Pepper to taste
  • 1 handful chopped basil
  • Fresh grated Parmesan cheese
  • 454g cooked rotini
  1. Cook bacon in a pan, add onions and garlic.
  2. When bacon is fully cooked add white wine and reduce.
  3. Add remaining sauce ingredients to the pan with the peas.
  4.  When peas are cooked, add the cooked pasta and fresh herbs season and serve with a handful of  fresh grated Parmesan cheese.

 

Andrew’s awesome sauce – Vegetarian

  • Canola oil for cooking
  • 1 ½ cups peas
  • 2 zucchini, cut into pieces
  • 2 clove garlic, minced
  • 1 small shallot, minced
  • 1/4 cup white wine
  • 3/4 cup vegetable stock
  • 2 tablespoons grainy mustard
  • 1/3 Cup Cream
  • Salt and Pepper to taste
  • 1 handful chopped basil
  • Fresh grated Parmesan cheese
  • 454g cooked rotini
  1. Cook onions and garlic in a pan, add squash.
  2. When squash is fully cooked add white wine and reduce.
  3. Add remaining sauce ingredients to the pan with the peas.
  4. When peas are cooked, add the cooked pasta and fresh herbs season and serve with a handful of fresh grated Parmesan cheese.

 

Beef Bolognese

  • Canola oil for cooking
  • 2lbs ground beef
  • 2 onion, small diced
  • 4 cloves Garlic, minced
  • 2 carrots, shredded
  • 2 Tbls basil, dried
  • 1 Tbls oregano, dried
  • 1 Tbls thyme, dried
  • 16 cups canned tomato, pureed
  • 2 can tomato paste, 369ml
  • Salt and pepper to taste
  • 908g cooked spaghetti
  1. Heat frying pan over medium heat, add canola oil.
  2. Add ground beef, season with salt and pepper. Cook until browned. Drain and set aside.
  3. Heat sauce pan over medium heat, add canola oil.
  4. Cook onions until translucent ~ Approx 4 minutes.
  5. Add garlic, carrots, and dried herbs and cook until carrots are softened ~ Approx 6 minutes.
  6. Stir in tomatoes and tomato paste and simmer for 15 minutes. Season with salt and pepper.
  7. Split finished tomato sauce in two batches, and add cooked ground beef into one of them.
