Strawberry Cooking Class Recipes
To start off our series of cooking with fruits, we visited Heemans and loaded our van with the freshest and sweetest strawberries this part of Southern Ontario has to offer! Below you can find the menu and recipes from our Strawberry Cooking Class:
Strawberry banana oatmeal cookies (1x recipe each group)
Strawberry salsa (1x recipe each group)
Strawberry lemonade (1x recipe each group)
Strawberry salad dressing (1x recipe each group, plus 1x salad recipe each group)
Strawberry Banana Oatmeal Cookies
- 1 cup instant oats
- ¾ cup whole wheat flour
- 1 ½ teaspoon baking powder
- 1 teaspoon ground cinnamon
- ¼ teaspoon salt
- 2 tablespoons coconut oil or butter, melted and cooled
- 1 small banana, mashed
- 1 teaspoon vanilla extract
- ½ cup honey
- ¾ cup fresh strawberries, diced
Whisk together the oats, flour, baking powder, cinnamon, and salt in a medium bowl. In a separate bowl, whisk together the coconut oil, mashed banana, and vanilla. Stir in the honey. Add in the flour mixture, stirring just until incorporated.
Fold in the strawberries. Let the cookie dough rest for 10 minutes.
Drop the cookie dough into 15 rounded scoops onto the prepared sheet, and flatten slightly using a spatula. Bake at 325°F for 12-14 minutes. Cool on the pan for 10 minutes before turning out onto a wire rack.
- 6 strawberries, hulled and diced
- 1/2 lime, juiced and zested
- 1/2 Tbsp honey or sugar
- 1 Tbsp chopped cilantro
- 1 Tbsp chopped mint
- Dash of hot sauce
- Pinch of salt
Toss everything together. Season with the hot sauce, taste and add a touch more if you like. The trick is to make the spiciness noticeable but not dominant, a way to balance the sweet and sour flavours of the salsa.
- 4 cups water
- 1/2 pound strawberries cleaned and stems removed
- 1/4 cup honey
- 1/2 cup lemon juice
- Juice of 1 lime
Warm 1 1/2 cups of water in a pot with the honey until well combined.
In a large pitcher, combine the remainder of the water, the honey water, lemon juice and lime juice.
Put your strawberries in a blender and blend until very smooth.
Put the strawberries through a fine meshed sieve. You’ll have to stir and press with a spatula to get it through the sieve completely.
Stir strawberry juice into the pitcher and stir well.
Chill and serve.
Strawberry Balsamic Vinaigrette
- 1/3 cup strawberries, mashed
- 2 tablespoons balsamic vinegar
- 6 tablespoons canola oil
- 1 teaspoon fresh thyme leaves
- 1/2 teaspoon Dijon mustard
- 1/2 teaspoon maple syrup
- pinch of ground black pepper
- salt to taste
Combine strawberries, Dijon, maple syrup, balsamic, thyme, pepper and salt in a bowl, and slowly drizzle in canola oil a drop at a time, while whisking constantly. Transfer salad dressing to a squeeze bottle or mason jar. Serve with your favourite salad ingredients.
Super Strawberry Salad
- 1 small container of mixed greens
- 1/2 cucumber, sliced into thin half moons
- 1/2 pint of strawberries, sliced
- 1/4 cup pumpkin seeds
- 1/4 cup feta cheese, crumbled
In a large bowl, mix together all ingredients with your favourite salad dressing, and enjoy!
